Multiple, heated mixing vessels typically take two hours to melt down block fondant and
can each only produce half a tonne of fondant per hour.
We approached a supplier of bakery machinery to help develop a
new process based on Celebration Icing Sugar, one of our finely milled icing sugars.
Our solution is one central vessel that can mix Celebration fondant,
cold, in just 20 minutes, thereby enabling manufacturers to make 2-3 tonnes in an hour.
